Risotto alla Milanese

Risotto alla Milanese (x4)

  • riso carnaroli (the king of rices) 400gr;
  • brodo di carne-beef broth (boiling) 1lt;
  • vino bianco secco-dry white wine 1/2 cup;
  • burro-butter 40gr;
  • midollo di bue-beef bone marrow 40gr;
  • grana padano 60gr;
  • cipolla-onion 30gr;
  • zafferano-saffron 0,5gr


Saffron is very rich in anti-oxidants, after a hard training or a hard race helps eliminate the double quantity of free radicals as against the vit.C and six times more the vit.E. Try if possible to cook the risotto “al dente”, it is easier to digest.
